The Xiaomi Book S is great value if you are technically well versed enough to know your way around Windows and don't require any specific apps, but are primarily looking for a tablet to browse the web, watch videos and do the occasional document editing. The Windows interface is a bit awkward to use with a touchscreen compared to iPadOS, but responsive, snappy and functional. Due to the decent technical specs and long support cycle of Windows 11, this tablet should last for years to come with full security updates and the latest features.
